Country Style Stuffed Pork Loin
Serves 9-11 (Note: you can cut the pork loin in half & freeze for smaller
serving sizes and later use.)
-1 Pork loin approx. 7-9 lbs. remove excess fat
-4-5 Granny Smith Apples, peeled and diced
-2-3 Medium Vidalia onions, diced
-1 cup of brown mustard
-Salt & Pepper to taste
-6 Wooden Skewers
Procedure:
Using a chef knife, make a long cut down the center of the pork loin with
the tip of the blade going about half way into the meat. The loin should
be partially divided into two halves, but not completely separated.
Make another similar cut on the inside of each half of the pork loin, using
your fingers to separate the meat so that you open the loin into a
rectangle. Remove all the excess meat from your rectangle and set aside to
make room for the stuffing. Once you have done so, using a pastry
brush spread an even coat of the brown mustard on the inside of the loin.
Sprinkle with salt & pepper, set aside. Next, take your diced apples and
onions and sautee' over medium heat with a little olive oil until the apples
are soft and the onions are translucent. Finally, take the apple and onion
mix and lay it down the center of the pork loin. Using your hands, roll the
pork loin back together like a sleeping bag. To hold your loin
together, using your wooden skewers, pierce the top of the loin at an angle
and push all the way through. Place in a roasting pan or sheet pan, brush
the top with olive oil and bake in the oven at 325 degrees for 90 minutes.
Remove from oven and let rest for 15 minutes before you serve. Enjoy! P.S.
Meat that was set aside can be used at a later time by adding to soup,
sauces or whatever your imagination can dream of!
